Food tech startup Mighty Cricket is landing on HyVee shelves – checking off two important milestones for the company.

Sarah Schlafly, Mighty Cricket founder

“This is our first big retailer,” CEO Sarah Schlafly told the 4thEst8. “Proof that this is a product people want and they’re buying it in mainstream grocery stores.”

The deal opens up Columbia, Missouri for the food tech company as well. If the cricket protein-based oatmeals, pancakes and protein shakes perform well in those three stores (and one in Southern Illinois) other Hy-Vee supermarkets could be next. Hy-Vee has more than 280 stores in Iowa, Illinois, Kansas, Minnesota, Missouri, Nebraska, South Dakota and Wisconsin.

Schlafly launched Mighty Cricket in 2017 to apply a very old technology – the cricket – to a modern food and sustainability problem. A pound of cricket protein takes a fraction of the water and other natural resources to make when compared with cow protein. An equivalent mass of crickets emits far less greenhouse gas than a cow as well. Products include protein powders, flours, oat meals and protein bars. In addition to online sales Mighty Cricket can be found in St. Louis at The Alpine Shop, Momentum Cycles, The Annex Coffee and Foods, and AO&CO Market and Cafe.
