Mighty Cricket products are now available at St. Louis area Fresh Thyme Markets.
“We were in one location to start with, and then they expanded us to all the St. Louis stores,” CEO Sarah Schlafly told bizblip. “I think it‘s six.”
Schlafly launched Mighty Cricket in 2017 to apply a very old technology – the cricket – to a modern food and sustainability problem. A pound of cricket protein takes a fraction of the water and other natural resources to make when compared with cow protein. An equivalent mass of crickets emits far less greenhouse gas than a cow as well. Mighty Cricket products include protein powders, flours, oat meals and protein bars. In addition to online sales Mighty Cricket can be found in St. Louis at The Alpine Shop, Momentum Cycles, The Annex Coffee and Foods, and AO&CO Market and Cafe.
“If we perform well, in these six stores, I‘m sure we‘ll get national distribution from that,” said Schlafly.
Mighty Cricket is in the 2021 cohort of Arch Grant recipients, receiving $50K in undiluted cash. The company currently employs three people, two full time and one part time.
